How a bag happens

Tuesday to Thursday.

One drum, a few dozen kilos at a time, and the café as the quality check.

Freshly roasted coffee beans turning in a roaster's stainless steel cooling tray.
  1. 01 · Tue

    Green arrives

Sacks land on Tuesday. We only keep what we can roast before it goes quiet in the bag.

  2. 02 · Wed

    Wednesday roast

One drum, a few dozen kilos at a time. If a lot tastes better a shade lighter, we stop there.

  3. 03 · Thu

    On the bar

Thursday it is in the grinder and on the shelf. The café is the quality check.

An unlabelled kraft coffee bag and a small ceramic cup on a stone doorstep.
