Two farms, one ridge, opposite ideas.

El Mirador dries a honey. El Roble seals Pink Bourbon for three days. We roast them as a pair on purpose.

Green hills and pasture under low cloud

Photographs on this site are stock images used as illustration. They are not from the named lots, farms or places.

Honey should taste like cane, not like a process trying to be noticed.

Buying note, Huila

The ridge

Huila’s mid-year mitaca is the harvest we wait for: smaller volumes, slower drying, a cleaner cane-sugar sweetness than the main crop in some years. Both farms sit on the same weather and disagree about what to do with the mucilage.

02

El Mirador

Caturra and Castillo, pulped and dried with a thin honey coat under partial shade. Red apple stays intact. If we taste cooked apple, the dryer rushed the last day and the lot does not ship under our name.

03

El Roble

Pink Bourbon, sealed 72 hours, then washed. We asked them to stop there. Longer anaerobics can be loud and short-lived. This one is dense, tropical, and stable enough for espresso.
