The name

A theory is only useful if the cup agrees.

We started Bean Theory because most coffee copy describes a feeling and then sells a dark roast. We would rather publish the lot, the brew, and the thing we were wrong about last month.

What we actually do

  1. 01

    We buy samples before contracts.

If a lot only tastes good the day it arrives, we do not roast it for you. Coffees rest eight days after roast, then ship. The date on the bag is the roast date, not a best-by invented by marketing.

  2. 02

Development stops when the sugars open.

We do not chase a color. Washed florals stay light. A natural with cocoa can take a few more seconds. Espresso profiles are separate — El Roble is not just the filter roast pulled short.

  3. 03

    The bar has four seats.

The bar at 14th & Adeline has four seats and the coffee we are arguing about that week. Come Thursday through Sunday, nine to two. If you want a lecture, read the origin note. If you want the cup, sit down.

How to read a bag

The label is the whole argument.

Pick a lot. The panel is what we print — no story on the front that the cup cannot keep.
